Nutrient-Dense Fried Rice

One of the easiest meals I make for my 3 year old son is fried rice. My husband’s idea of fried rice is mainly rice with a couple of vegies like cabbage and onion, then eggs and lots of black pepper. My idea of fried rice is “how many different types of food and nutrients can I pack into this?” My son is not a fussy eater but, like most kids, he doesn’t like green leafy vegetables. About the only time I can get these into him is through pesto or…. fried rice! Tonight, I made my most nutrient-dense fried rice ever:

Duck fat (left over from a duck curry I had made a week or so earlier)
onion
garlic
pasture-fed bacon
carrot
green beans
silverbeet stalks
silverbeet leaves
leftover cooked rice
eggs
dried fish (those tiny dried ones you can get from Asian grocers)
bonito flakes
nori seaweed
sesame oil
soy sauce
salt
pepper

Everything was finely chopped - especially the silverbeet leaves. My son likes the little dried fish but you can always grind them in a spice grinder to make a fish powder to add to things like this and soups for calcium and other nutrients. I was even thinking I could have finely chopped some sauerkraut and stirred it through afterwards if I’d had some. And maybe a quicker way to chop up the vegies finely is in a food processor like the Braun or something because I do find the prep involved in chopping everything finely is rather time-consuming.

To my delight, he wolfed down the whole bowl.

  1. Yum. Thankyou Fillipa. Your fried rice sounds awsome - I’m now planning to cook it later in the week. Think i’ll cook extra and have plenty for lunches the next day too.
